Smoked Tomatoes

12 large flavorful ripe tomatoes

OR 24 plum tomatoes

3 tablespoons olive oil

2 teaspoons salt

 

Yield: about 6 cups

 

If I had to pick a favorite vegetable dish/ingredient that was generated

from this entire project, this would be it. I started using smoked

tomatoes in so many recipes that the team threatened to revoke my license

to smoke. You are not obligated to hold back - use these smoky/sweet

morsels in anything that rings your bells.

 

Remove the stems and cut the tomatoes in half lengthwise. Drizzle olive

oil on top of each tomato and sprinkle generously with salt. Allow the

tomatoes to sit at room temperature about 10 minutes.

 

Prepare an electric water smoker according to the manufacturer's

directions. Smoke the tomatoes 1 hour and 15 minutes. The tomatoes can be

used right away, stored in a sealed container in the refrigerator for 1

week, or frozen up to 6 months.
