Guest guest Posted March 11, 2001 Report Share Posted March 11, 2001 * Exported from MasterCook * Smoked Porcini Mushrooms Recipe By : Lora Brody Plugged In, 1998, page 364 Serving Size : 1 Preparation Time :0:00 Categories : Smoker Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup porcine mushroom oil -- if available OR olive oil 2 tablespoons soy sauce 3 tablespoons balsamic vinegar 2 tablespoons pure maple syrup 1/2 pound portabello mushroom caps -- wiped clean and cut into 1/2-inch-thick slices 3 tablespoons balsamic vinegar Yield: 1/2 pound mushrooms I suppose you could call this the ultimate indulgent vegetable. I prefer to think of it as yet another fine example of why everyone should own a smoker. Serve these hot, at room temperature, cold in a salad, or use them in soup. In a medium-size bowl, combine the oil, soy sauce, vinegar, and maple syrup and mix to blend. Add the mushrooms and let soak at least 1/2 hour at room temperature.
