Smoked Corn Relish

Amount Measure Ingredient -- Preparation Method

1 1/2 cups smoked corn kernels

(see separate recipe)

1 small red onion -- finely minced

1 small red bell pepper -- seeded and diced

3 tablespoons honey

3 tablespoons cider vinegar

1 teaspoon Dijon mustard

1/4 teaspoon dill seeds

salt and freshly ground black pepper -- to taste

 

Yield: About 2 cups

 

Yet another great use for those smoked corn kernels.

 

Combine all the ingredients in a mixing bowl and stir. Store the relish in

a covered container in the refrigerator at least 48 hours before serving.
