Guest guest Posted March 10, 2001 Report Share Posted March 10, 2001 * Exported from MasterCook * Seitan Tzimmes Recipe By : Stir Crazy! by Susan Jane Cheney, page 80 Serving Size : 4 Preparation Time :0:00 Categories : Fruits Soups And Stews Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon light sesame or canola oil 1 large onion -- chopped 2 large carrots; chopped 2 medium sweet potatoes -- peeled and diced 1/4 teaspoon round cinnamon 1/4 teaspoon freshly rated nutmeg OR 1/8 teaspoon ground nutmeg Freshly ground black pepper -- to taste 1 teaspoon grated peeled fresh ginger 1/2 teaspoon salt -- plus more to taste 1 1/2 cups seitan marinade -- vegetable stock, OR unsweetened apple or orange juice 1/2 pound traditionally seasoned seitan cut into 1/2-inch dice 1 teaspoon finely rated orange zest 1/2 cup chopped pitted prunes 1/2 cup chopped unsulphured apricots -- (preferably Turkish) Tzimmes is a traditional Jewish stew, consisting of carrots, dried fruits, sweet spices, and sometimes beef. In Yiddish, tzimmes means " fuss, " and it usually implies " making a mountain out of a mole-hill. " The complex flavor of this savory stew definitely goes beyond the sum of its simple parts. Seitan adds substance, making this a satisfying main dish. I like to serve it with a combination of long-grain brown rice and wild rice. Set a wok over medium-high heat. Pour the oil around the rim and swirl it to coat the pan. Add the onion and stir-fry about 3 minutes, until translucent. Add the carrots and continue stir-frying for about 3 minutes. Stir in the sweet potatoes, cinnamon, nutmeg, pepper, and ginger and stir-fry briefly. Add 1/2 teaspoon salt and the marinade, seitan, zest, prunes, and apricots. Bring the liquid to a simmer. Cover the wok, reduce the heat, and simmer gently for about 10 minutes or until the vegetables are tender, liquid is reduced, and flavors are melded. Add more pepper and salt to taste.
