Guest guest Posted March 8, 2001 Report Share Posted March 8, 2001 * Exported from MasterCook * Tempeh Mushroom Marsala Recipe By : Stir Crazy! by Susan Jane Cheney, page 72 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup boiling water 1/2 ounce dried porcini mushrooms 1 pound combined fresh cremini and portobello and shiitake mushrooms 1/2 cup marsala 2 tablespoons mellow barley miso 4 teaspoons extra-virgin olive oil 8 ounces packaged tempeh 1 large onion -- chopped 8 large garlic clove -- minced 2 teaspoons minced fresh thyme OR 1 teaspoon dried thyme Freshly ground black pepper -- to taste 1/4 cup minced fresh parsley Salt -- to taste Serve this hearty mushroom and tempeh mixture over long-grain rice, wild rice, or kasha. Pour the boiling water over the porcini and set them aside to soak for about 30 minutes. Drain well, reserving the soaking water. Thinly slice the mushrooms. Separate the flesh mushroom caps and stems. Save the shiitake stems for making stock; slice the caps. Slice the cremini and portobello stems and caps separately. Whisk together the marsala and miso; set aside. Add 2 teaspoons of the oil to a wok over medium heat. Add the tempeh and turn immediately to coat both sides with oil. Brown it well, then remove from the wok and cut into strips about 1 inch long and 1/2 inch wide. Pour the remaining 2 teaspoons oil into the wok over medium-high heat and swirl it to coat the bottom and sides. Add the onion and stir-fry for 2 to 3 minutes or until translucent. Stir in the garlic, mushroom stems, thyme, and black pepper. Continue to stir-fry, gradually adding the sliced porcini and fresh mushroom caps, and cook until the mushroom caps appear moist. Stir in the tempeh and marsala-miso mixture, reduce the heat, and cook gently for several minutes. Remove from the heat and add the parsley. Season with salt.
