Worcestershire Sauce in Soup

I, also, have not tried this but I think I know why it is used. It is

possibly used as a substitute for fish sauce, which the thai people use, in

many items even soups. I've seen it used in many thai soup recipes.

 

So, make sure when you order food at a Thai restaurant, that you ask them if

there is fish sauce in the supposedly vegetarian soup. It could be in there

for flavoring. Once it hits the pan, the fish smell and taste disappear.

Just like the use of anchovies in Italian cooking. Mainly there for that

special flavor - not the smell or taste.
