Tandoori Kebabs

Amount Measure Ingredient -- Preparation Method

Tandoori Marinade:

1 cup tofu yogurt

2 medium onions -- diced

4 teaspoons ground ginger

2 teaspoons turmeric

1 teaspoon curry powder

1 teaspoon chili powder

1/2 teaspoon ground coriander

1/2 teaspoon cumin

1/2 teaspoon garlic granules

1/2 teaspoon nutmeg

1/2 teaspoon paprika

Kebabs:

3/4 pound extra-firm tofu -- cut into 48 equal cubes and marinated

at least 12 hours in Breast of Tofu Marinade

OR

14 ounces pressed tofu -- cut into 48 equal cubes and marinated at

least 12 hours in Breast of Tofu Marinade

32 small mushroom caps

8 bamboo skewers -- soaked in cold water at least 15

minutes

 

In a shallow container or dish, mix together the tandoori marinade ingredients.

Add the tofu cubes, mixing well and making sure the tofu cubes are covered.

Cover and marinate for several hours or several days in the refrigerator.

 

Thread the tofu cubes and mushroom caps alternately on skewers. Broil, grill,

or barbecue the skewers, basting with the marinade occasionally, until slightly

charred on two sides. Serve hot in chapatis, whole wheat pita breads, or flour

tortillas, with tofu sour cream, tofu yogurt, chutney, and perhaps sliiced raw

vegetables on the side.
