Guest guest Posted March 7, 2001 Report Share Posted March 7, 2001 * Exported from MasterCook * Mac and Cheese Recipe By :Soyfoods Cooking for a Positive Menopause - Bryanna Clark Grogan Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces penne, rigatoni, or medium shell pasta Sauce: 2 cups water 2/3 cup nutritional yeast flakes 2/3 cup extra-firm silken tofu or medium-firm regular tofu 1/3 cup unbleached flour 1/4 cup cornstarch 1 chicken-style vegetarian bouillon cube -- crumbled OR enough broth powder to flavor 1 cup liquid 3 tablespoons calcium carbonate (optional) 2 tablespoons light miso 2 teaspoons lemon juice 1/2 to 3/4 teaspoon salt 1 teaspoon vegetarian Worcestershire sauce OR 1/2 teaspoon each garlic granules, Hungarian paprika, dry mustard, and Tabasco sauce 1/4 teaspoon white pepper 2 cups water pinch freshly ground nutmeg 1 to 2 tablespoons nondairy margarine (optional) 1 cup fresh bread crumbs paprika soy Parmesan, for garnish Cook the pasta until al dente. Drain and set aside. Pre heat the oven to 350F. Combine all of the sauce ingredients except the last 2 cups water, the nutmeg, and margarine, if using, and the breadcrummbs and paprika. Blend until very smooth. Pour into a large pot or microwave-safe bowl, and whisk in the remaining 2 cups water. Place the pot over medium heat, and stir until the mixture thickens. Turn the heat down and cook for several minutes, stirring frequently. To microwave, cook 4 minutes, and whisk. Microwave 4 minutes more, whisk, and microwave 3 minutes more. Whhisk in the nutmeg and margarine, if using. Add the cooked, drained pasta, and mix well. Spread the mixture in an oiled casserole, and top with bread crumbs and paprika. You can also sprinkle on some soy Parmesan. Bake for about 20 minutes, or until bubbly. Description: " This is really good! One caution: Although you may think it looks like too much sauce, the pasta really soaks it up. You can find calcium carbonate at your local pharmacy.
