Rotini with Thai Twist

 

Recipe By :Susan Jane Cheney, Stir Crazy (1998)

Amount Measure Ingredient -- Preparation Method

1/4 cup shoyu or natural soy sauce

1/4 cup fresh lime juice

2 teaspoons Sucanat or light brown sugar

2 teaspoons tamarind concentrate

1 tablespoon peanut oil

1 large carrot -- sliced thin

4 cloves garlic -- minced

1 fresh hot chile -- seeded and minced

2 teaspoons grated peeled fresh ginger

1 medium red bell pepper -- sliced thin

4 scallions -- sliced on a diagonal

2 cups mung bean sprouts

4 cups thinly sliced Chinese cabbage or bok choy

3/4 pound rotini -- cooked al dente

2 eggs -- lightly beaten

1/2 cup finely chopped dry-roasted peanuts

1/2 cup chopped fresh cilantro

Salt -- to taste

 

Whisk together the shoyu, lime juice, Sucanat, and tamarind; set aside.

 

Set a wok over high heat. Pour the oil around the rim and swirl it to coat the

pan. Add the carrot and stir-fry for about 2 minutes. Add the garlic, chile,

ginger, and bell pepper and stir-fry for 1 to 2 minutes, or until the carrot and

pepper are tender. Add the scallions, sprouts, cabbage, and rotini; toss

together and continue to stir-fry until everything is hot.

 

Drizzle in the egg, stirring constantly. Stir in the shoyu mixture, peanuts, and

cilantro. Taste and add salt if needed. Serve immediately.
