Magnificent Magenta Pasta

 

Recipe By :Susan Jane Cheney, Stir Crazy (1998)

Amount Measure Ingredient -- Preparation Method

1 tablespoon extra-virgin olive oil

1 large sweet red onion -- chopped

6 cloves garlic -- or more, minced

Freshly ground black pepper -- to taste

2 cups thinly sliced beet greens (optional)

1/4 cup dried currants

4 medium julienned cooked beets -- reserving

3/4 cup beet cooking liquid

1/2 teaspoon salt -- plus more to taste

1/2 cup dry red wine

3/4 pound farfalle -- cooked al dente

2 tablespoons fresh lemon juice

2 tablespoons minced fresh dill or

1 tablespoon dried dill

1/4 cup lightly toasted pine nuts

 

Set a wok over medium-high heat. Pour the oil around the rim and swirl it to

coat the pan. Add the onion and stir-fry for 2 to 3 minutes, or until

translucent. Stir in the garlic and continue stir-frying for about 1 minute.

Grind in pepper, add the beet greens if desired, and stir-fry for about 2

minutes, until the greens wilt.

 

Stir in the currants, beets, and salt. Add the wine and reserved beet cooking

liquid and bring it to a simmer. Cook, stirring often, for several minutes,

until the vegetables are thoroughly tender and the liquid is considerably

reduced.

 

Add the cooked pasta and lemon juice and toss well. Season with more salt and

pepper. Add the dill and pine nuts; toss again and serve immediately.

 

TIP - cook the beets. Peel while warm. Cut into thin 1½-inch-long strips.
