Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 1/2 pounds firm regular tofu

Teriyaki Marinade:

1/2 cup soy sauce

1/2 cup water

1/4 cup dry sherry, white wine, or apple,

pineapple, or white grape juice

1/3 cup maple syrup or unbleached sugar

1 teaspoon grated fresh ginger, or 1/4 tsp powdered

ginger

1 clove garlic -- crushed

Serve these like cutlets or as burgers on sesame buns. You can also slice up

and eat in a wheat tortilla, or add them to a stir-fry. This marinade can also

be used in reconstituted textured soy protein chunks and commercial vegetarian

chicken-style products.

Cut the tofu into 1/4-inch-thick slices.

In a small saucepan, mis together the marinade ingredients. Simmer over high

heat for a few minutes until cooked through. Lay the tofu slices in a shallow

container, and pour the sauce over them. Cover and refrigerate for up to a

week. Grill or broil the slices, or pan-fry in a nonstick skillet over

medium-high heat until browned on both sides.

Yield:

" 8 burgers "
