Guest guest Posted March 6, 2001 Report Share Posted March 6, 2001 * Exported from MasterCook * Super-Quick Spinach With Pine Nuts Recipe By :Susan Jane Cheney Serving Size : 4 Preparation Time :0:00 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 teaspoons extra-virgin olive oil 4 large cloves garlic -- minced or sliced thin 1 pound well-rinsed coarsely chopped spinach leaves 4 teaspoons fresh lemon juice freshly ground black pepper to taste salt to taste 2 tablespoons lightly toasted pine nuts Set a wok over medium-high heat Pour the oil around the rim and tilt the pan to coat the sides. Add the garlic and stir-fry for about 1 minute, taking care not to burn it. Add the spinach and continue to stir-fry briefly, just until wilted but still bright green. Remove the wok from the heat and add the lemon juice, pepper, and salt. Serve immediately, garnished with the pine nuts.
