Mushrooms Magnifique

Amount Measure Ingredient -- Preparation Method

4 teaspoons extra-virgin olive oil

4 large shallots -- sliced thin

8 large cloves garlic -- minced

1 pound medium cremini mushrooms -- halved lengthwise

1/4 cup dry white wine

2 tablespoons shoyu or natural soy sauce

1/4 cup minced fresh parsley or chervil

 

Set a wok over medium-high heat. Add the oil and tilt the pan to coat the sides.

Add the shallots and garlic and stir-fry for 2 to 3

minutes. Add the mushrooms and continue stir-frying for 2 to 3 minutes. Add the

wine and shoyu and cook, stirring, until the liquid

is almost gone. Stir in the parsley or chervil and serve immediately.

 

Variations: • Substitute 1 medium onion, chopped fine, for the shallots. •

Thinly slice 4 medium stalks asparagus on the diagonal

and add them along with the mushrooms.
