Guest guest Posted March 6, 2001 Report Share Posted March 6, 2001 * Exported from MasterCook * Spicy Chinese Nutty Noodles Recipe By :Susan Jane Cheney, Stir Crazy (1998) Serving Size : 4 Preparation Time :0:00 Categories : Kitpath New Import Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large egg Pinch salt 3 teaspoons light sesame oil 1 teaspoon hot chile oil 2 teaspoons minced garlic 3 tablespoons shoyu or natural soy sauce 4 teaspoons rice vinegar 4 scallions -- sliced thin 1/2 cup red bell pepper -- thin strips 1/4x1-inch 1/2 pound thin spaghetti 2 cups chopped broccoli -- small florets and stems 3/4 cup finely chopped unsalted dry-roasted peanuts 3/4 cup chopped fresh cilantro Beat the egg with the salt. Set a wok over medium heat. Add 1 teaspoon of the sesame oil and swirl it to coat the sides of the pan. Add the beaten egg and tilt the wok to spread it thinly. As the egg cooks, loosen the edge with a spatula. Remove the wok from the heat. Fold the egg sheet into thirds, transfer it to a cutting board, and slice it into thin strips. Whisk the remaining 2 teaspoons of sesame oil with the hot chile oil, garlic, shoyu, and vinegar. Add this mixture to the wok over low heat, along with the scallions and bell pepper. Cook the spaghetti in rapidly boiling water. When it is just about done, add the broccoli. Cook for about 1 minute more and drain. Add the pasta and broccoli to the wok. Add the peanuts and toss with the other ingredients. Heat briefly, stirring often, until everything is warmed through. Add the cilantro and toss again. Serve immediately, garnished with egg shreds.
