Guest guest Posted March 5, 2001 Report Share Posted March 5, 2001 Peanut Butter Muffins Combine: 1 3/4 C Flour 1/2 C Sugar 1 TB Baking Powder In a separate bowl, mix together 3/4 C Milk 1/2 C Peanut Butter 1/3 C Butter, melted 1 Egg (or alternate) For Topping: 1/2 C Almond, blanched Instructions: Method Combine the two mixtures and fill muffin tins 2/3 full with the batter. Sprinkle almonds evenly over each muffin. Bake @ 375 degree for 10-13 minutes. Glaze with powdered sugar fondant icing, (see recipe below) Icing: 1/3 C Milk 2 C Powdered Sugar Put in saucepan and heat over low hear for 3 minutes Store in an airtight container.
