Linguine with Leeks and Greens

Amount Measure Ingredient -- Preparation Method

1 tablespoon extra-virgin olive oil

1 large leek; halved lengthwise -- sliced thin, rinsed well

6 cloves garlic -- up to 8, minced

1 12-oz bunch escarole -- chopped coarse

1/4 cup raisins -- preferably golden

2 tablespoons capers

1/4 cup chopped pitted kalamata olives

3 cups coarsely chopped arugula leaves -- up to 4

1/4 cup chopped fresh parsley

1/4 cup lightly toasted pine nuts -- chopped, lightly toasted

or walnuts or almonds

3/4 pound linguine -- cooked al dente

Freshly ground black pepper -- to taste

Salt -- to taste

 

Set a wok over medium-high heat. Pour the oil around the rim and tilt the pan to

coat the sides. Add the leek and stir-fry for about 1 minute. Add the garlic and

continue to stir-fry for about 3 minutes as you gradually add the escarole.

 

Stir in the raisins, capers, and olives. Add the arugula, parsley, pine nuts,

and pasta; quickly toss with the other ingredients. Remove from the heat and

season with pepper and salt. Serve immediately.
