Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 tablespoon kuzu powder

2 tablespoons cold vegetable stock or water

2 cups low-fat milk or soy milk

2 tablespoons mellow white miso

1 tablespoon extra-virgin olive oil

1 large onion -- finely chopped

4 large cloves garlic -- or more, minced

1 large carrot: halved lengthwise -- sliced thin on a diagonal

1/4 teaspoon ground nutmeg

or 1/2 tsp freshly grated nutmeg

Freshly ground black pepper -- to taste

1 tablespoon minced fresh tarragon

or 1-tsp dried tarragon

1/2 pound fresh spinach leaves -- rinsed and chopped

4 teaspoons fresh lemon juice

1/4 cup minced fresh parsley

3/4 pound spinach fettucine -- cooked al dente

1/4 cup chopped pitted kalamata olives

Salt -- to taste

Combine the kuzu (kudzu) powder and cold stock in a small bowl and set aside

until the kuzu is dissolved, about 2 minutes. Add 1/3 to 1/2 cup of the milk and

the miso. Whisk until the mixture is smooth.

Set a wok over medium-high heat. Add the oil and swirl itto coat the pan. Add

the onion and stir-fry for 2 to 3 minutes, until translucent. Add the garlic and

carrot; continue to stir-fry 3 to 4 minutes, until the carrot is just tender.

Add the nutmeg, black pepper, and tarragon; stir-fry briefly. Stir in the

remaining milk and heat, but do not boil.

Reduce the heat to low and stir in the kuzu-miso mixture. Cook, stirring, until

the sauce thickens. Stir in the spinach and lemon juice; cook, stirring, until

the spinach wilts but is still bright green. Stir in the parsley, pasta, and

olives. Season with salt and serve immediately.

TIP: If you have fresh nutmeg, double the measure.

NOTES : You don't have to hunt down spinach fertuccine if it's not readily

available; this creamy spinach sauce works perfectly well with plain fettuccine
