Cheesy Corn and Frank Chowder

1 large onion -- chopped

4 cloves garlic -- minced

1 cup sliced celery

4 cups vegetarian broth

1 pound (4 medium) waxy potatoes -- peeled or unpeeled and diced

1 cup frozen corn kernels

4 tofu or other vegetarian franks -- thinly sliced into

rounds

1/4 cup nutritional yeast flakes

1/4 cup minced fresh parsley

2 teaspoons dry mustard

1 teaspoon salt, or 1 tablespoon light miso plus 1/2

tsp salt

1/4 teaspoon black or white pepper

1 pound medium-firm tofu

1 1/2 tablespoons lemon juice

1 tablespoon cornstarch

 

In a medium pot, steam-fry* the onion, garlic, and celery until they begin to

soften, about 5 minutes. Add the broth, potatoes, and corn. Simmer about 10

minutes, or until the potatoes are soft. Stir in the frank slices, yeast,

parsley, mustard, salt, and pepper.

 

Pour a few tablespoons of the broth into a blender. Add the tofu, cornstarch,

and lemon juice, and puree until very smooth. Pour the tofu mixture into the

broth pot, and stir over medium-high heat until t thickens, Serve immediately.

 

*Steam-Frying simply means sauteeing or stir-frying with little or no fat. To

do this, use a heavy skillet, preferably nonstick, or brush on 1/2 teaspoon of

oil with your fingertips. You can also use a well-seasoned wok, oiled the same

way. Heat the pan over high heat, add your chopped onions or other vegetable,

and one or two tablespoons of liquid (water, brooth, or wine), depending on the

amount of vegetables. Cook over high heat until the liquid starts to evaporate,

stirring constantly with a spatila or wooden spoon. Keep doing this until the

vegetables are done to your liking, adding just enough liquid to keep the

vegetables from sticking to the bottom of the pan--you don't want to stew them!

You can brown onions perfectly with this method. As soon as the natural sugar

in the onions starts to brown on the bottom and edges of the pan, add a little

liquid and scrape the caramelized residue from the pan, mixing it into the

liquids and cooking onions. Keep doing this u!

ntil the onions are soft and brown, being careful not to scorch them.
