Apple Fig Bread

Amount Measure Ingredient -- Preparation Method

1 cup all-purpose flour

3/4 cup whole-wheat flour

1/2 cup evaporated cane juice

OR milled cane

1 tablespoon baking powder

1/2 teaspoon salt

2/3 cup apple juice

1/4 cup melted butter

OR Canola oil

2 large eggs -- lightly beaten

1 1/2 cups apples, unpeeled and chopped

1/2 cup chopped pecans

1/2 cup diced dried figs

 

Preheat oven to 350°F. Grease a medium-sized loaf pan.

 

In large bowl, sift together flours, cane juice, baking powder and salt. In

medium bowl, combine apple juice, butter or oil and eggs; mix well. Add liquid

ingredients, mixing until just combined. Carefully fold in apples, pecans and

figs. Pour batter into loaf pan and bake for 50 minutes. Cool slightly before

slicing.

 

Makes one loaf.

Dense with figs and pecans, this hearty quick bread is great toasted and spread

with cream cheese.
