Gumbo Soup

1 tablespoon vegetable oil

1 cup chopped onions

1 cup chopped celery

3/4 cup chopped green bell peppers

1 teaspoon chili powder

3 cups cubed tomatoes

2 cups vegetable broth

(see separate recipes)

1 cup water

2 bay leaves

1/2 teaspoon dried oregano

1/2 teaspoon Tabasco sauce -- or to taste

1/4 teaspoon dried basil

1/4 teaspoon dried thyme

2 tablespoons white rice

1 1/2 cups sliced okra

1/4 teaspoon salt -- or to taste

 

Vegan. Low fat

 

Makes: 5 cups; serves: 4 to 6

 

As they say in the Campbell's soup ads, this is a soup that eats like a

meal. If you're not an okra fan, this soup taste's great even without it.

 

1. In a 3-quart saucepan, heat the oil over medium-high heat. Add the

onions, celery, and bell peppers; cook, stirring, until softened, about 3

minutes. Stir in chili powder until absorbed. Add the tomatoes; cook,

stirring, until softened, about 4 minutes. Add the broth, water, bay

leaves, oregano, Tabasco, basil, and thyme; bring to a boil.

 

2. Add rice. Reduce heat and simmer, uncovered, 20 minutes. Stir in okra

and salt; return to a boil. Reduce beat and simmer 10 minutes longer or

until okra is tender. Discard bay leaves.
