Tabouli (Laura Hershey)

Amount Measure Ingredient -- Preparation Method

1/2 cup fine bulgur

4 bunches parsley -- chopped

1 bunch green onions -- chopped

2 large tomatoes -- diced

1/2 bunch mint or 2 Tbs dry mint

1 teaspoon salt

1/2 cup olive oil

3 lemons -- juiced

 

Soak bulgur in room temperature water until soft (approximately 1 hour). Drain

the water. Remove stems from parsley. Chop fine, and combine with the remaining

ingredients. Serve chilled. Serves: 10. Calories per serving: 145; protein: 2

grams; carbohydrate: 12 grams; fat: 11 grams; cholesterol: 0 milligrams; sodium:

226 milligrams.
