Spicy Black Beans (Low Fat)

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil

1/2 onion -- diced

1/2 green bell pepper -- chopped

3 cloves garlic -- minced

1/4 teaspoon basil

2 bay leaves -- crushed

1/8 teaspoon cumin

14 1/2 ounces diced green chilis -- canned

3 15-oz cans black beans

 

In a medium saucepan, heat oil to sauté onions, bell pepper, and garlic until

crispy tender. Add seasonings, chilis, and beans. Heat on low to blend flavors.

(Extending the time enhances the taste.) Serve over rice or as the main entrée.

Serves: 8. Calories per serving: 94; protein: 4 grams; carbohydrate: 12 grams;

fat: 4 grams; cholesterol: 0 milligrams; sodium: 131 milligrams.
