Mexican Tomato Salad (Low Fat)

Amount Measure Ingredient -- Preparation Method

2 large tomatoes -- chunked

1/4 cup lemon juice

1/4 cup cilantro -- diced

1/2 cup cucumber -- coarsely chopped

1/2 onion -- diced

1/4 cup sliced olives

 

Combine all ingredients. Allow to marinate at least one hour to develop flavor.

Serve chilled. Serves: 6. Calories per serving: 25; protein: 0.8 grams;

carbohydrate: 4 grams; fat: 1 gram; cholesterol: 0 milligrams; sodium: 37

milligrams.
