Jerusalem Artichokes with Black Beans

1 tablespoon olive oil

1/2 cup sliced leeks (white and light green parts

only)

2 cups diced Jerusalem artichokes

1/4 cup vegetable broth

1 tablespoon fresh lemon juice

1 cup cooked black beans

 

In a 2-quart saucepan, heat the oil over medium-high heat. Add the leeks; cook,

stirring, until softened, about 1 minute. Add the Jerusalem artichokes,

vegetable broth, and lemon juice. Cook, stirring, 5 minutes or until the

vegetables are tender.

 

Stir in the black beans. Cook, stirring, until heated through.

 

Yield:
