Guest guest Posted March 2, 2001 Report Share Posted March 2, 2001 * Exported from MasterCook * Noodles with Seitan Recipe By :1,000 Vegetarian Recipes - Carol Gelles Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup vegetable broth 2 tablespoons mirin or dry sherry 1 tablespoon black bean sauce (available in Asian markets) 2 teaspoons sugar 1 teaspoon soy sauce 1 teaspoon cornstarch 1 pound fresh lo mein noodles oe thin spaghetti 2 tablespoons vegetable oil 3 cups lightly packed shredded Chinese cabbage or bok choy 1 cup sliced onions 2 cloves garlic -- minced 1 cup mung bean sprouts 1 8 oz container seitan in soy sauce -- drained and sliced 1 teaspoon sesame oil Serves 4 to 6. In a small bowl, stir together thhe broth, mirin, black bean sauce, sugar, soy sauce and cornstarch; set aside. Cook the noodles according to package directions; drain. While the noodles are cooking, heat the vegetable oil in a wok or large skillet. Add the Chinese cabbage, onions, and garlic. Cook, stirring, until tender-crisp, about 4 minutes. Add bean sprouts and seitan; cook, stirring, until wilted, about 2 minutes. Stir in the sesame oil. Add the noodles and reserved sauuce. Cook, stirring, until heated through, about 2 minutes. Variation: Add 1 cup julienned carrots when you add the Chinese cabbage.
