Noodles with Peanut Sauce

12 ounces lo mein noodles

1/4 cup smooth peanut butter

3 tablespoons soy sauce

1 tablespoon mirin or dry sherry

2 teaspoons cider vinegar

2 teaspoons sugar

1 teaspoon chili oil

1/2 small garlic clove

1/3 cup sliced scallions (white and light green

parts)

 

Serves 4 to 6. Cook the noodles according to package directions. Drain and

rinse under cold water until cool.

 

While the noodles are cooking, place the peanut butter, soy sauce, mirin,

vinegar, suugar, chili oil and garlic in a blender or food processoe container

fitted with a steel blade. Cover and process until thoroughly combined.

 

Toss noodles with peanut sauce and scallions.

 

Variation: Toss 1 cup blanched bean sprouts or julienned cucumber with the

noodles.

 

Description:

" If you don't have access to fresh lo mein noodles, you can use 8

ounces of thin spaghetti. "
