Low fat Makes: 3 1/2 cups; serves: 4 to 6 The sauce makes this dish a little moister than standard rice dishes. 1. In a 2-quart saucepan, heat the oil over medium-high heat. Add the onions and bell peppers; cook, stirring, until softened, about 3 minutes. 2. Stir in the water; bring to a boil. Stir in the rice; return to a boil. Reduce heat and simmer, covered, 20 minutes. 3. Stir in the corn, beans, and barbecue sauce. Simmer, covered, 10 minutes longer.
