Guest guest Posted March 1, 2001 Report Share Posted March 1, 2001 * Exported from MasterCook * Lemon Squares Recipe By : 1,000 Vegetarian Recipes by Carol Gelles, page 538 Serving Size : 24 Preparation Time :0:00 Categories : Cookies And Bars Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- ***CRUST*** 1/2 cup oil-purpose flour 1/4 cup whole wheat flour 1/2 teaspoon baking powder 1/4 teaspoon salt 3/4 cup softened butter or margarine -- (1 1/2 sticks) 1/3 cup sugar 1 egg ***TOPPING*** 4 eggs 1/2 cup fresh lemon juice 2 teaspoons grated lemon rind 3/4 cup sugar 1/4 cup all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon salt Confectioners' sugar Makes: 24; serves: 8 to 12 1. Preheat the oven to 350F. Grease a 9 x 13 x 2-inch baking pan. 2. Prepare the crust by stirring together both flours, 1/2 teaspoon baking powder, and 1/4 teaspoon salt. 3. In a medium bowl, cream the butter with 1/3 cup sugar. Beat in 1 egg, then the dry ingredients. Spread into prepared pan. Bake 20 minutes or until lightly browned. 4. While the crust is baking, prepare topping. In a medium bowl, beat 4 eggs, the lemon juice, and lemon rind until combined. S. Stir together 3/4 cup sugar, 1/4 cup flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt. Add to lemon mixture and beat until combined. Pour over baked crust. Return to oven and bake 20 minutes longer. 6. Cool in pan. Sprinkle generously with confectioners' sugar. Cut into 2-inch squares.
