Mashed Rutabaga

4 cups cubed rutabaga -- 1-inch pieces

1 tablespoon firmly packed brown sugar (light or dark)

2 teaspoons butter or margarine

1/2 teaspoon salt, or to taste

1/8 teaspoon ground nutmeg

 

Serves 3 to 4. Cook the rutabaga in boiling water for 20 minutes or until

tender; drain.

 

Place in large bowl. Add the remaining ingredients. Mash with a fork, electric

mixer, or food processor.

 

Variation: Omit the brown sugar and nutmeg.

 

Description:

" There's just a hint of sweetness in these rutabaga. If you'd like

more, increase the brown sugar to taste. "
