Sauteed Snow Peas, Peas, and Wild Mushrooms

1 1/2 tablespoons olive oil

3 tablespoons minced shallots

1 1/2 cups sliced wild mushrooms (preferable

shiitake, portobello, or similar meaty

mushrooms)

1 cup fresh shelled peas

2 tablespoons white wine, or broth, or water

3 cups snow peas -- trimmed

1/4 teaspoon salt, or to taste

1/8 teaspoon pepper

 

Serves 4 to 6. In a large skillet, heat the oil over medium-high heat. Add the

shallots; cook, stirring, until softened, about 4 minutes. Add the wine; cook,

stirring, until evaporated.

 

Add the snow peas; cook, stirring, until tender-crisp, about 3 minutes.

 

Add the salt and pepper and toss.

 

Variation: Add 1/2 cup julienned red peppers when you saute the shallots.

 

Description:

" If you don't have fresh peas, use frozen, but add them at the end,

cooking just long enough to heat them through. "
