Creole Okra with Corn

1 tablespoon vegetable oil

1/2 cup chopped onions

1/2 cup chopped green bell peppers

1/2 cup chopped celery

1 1/2 cups whole okra -- top stems sliced off

1 11 oz can corn kernels -- undrained

1 8 oz can tomato sauce

1/4 teaspoon salt

1/8 teaspoon ground red pepper or more, to taste

 

In a 1 1/2 cup (Judy's note: another typo I think, I'd use a 2-quart saucepan),

heat the oil over medium-high heat. Add the onions, green peppers, and celery;

cook, stirring, until tender-crisp, about 3 minutes. Add the okra; cook,

stirring, until okra turns brighter green, about 2 minutes.

 

Add the corn, tomato sauce, salt, and red pepper. Bring to a boil; reduce heat

and simmer, covered, 10 to 15 minutes or until the okra is tender.

 

Variatiion: Add 1 teaspoon chili powder before adding the tomato sauce.

 

Yield:
