Guest guest Posted March 1, 2001 Report Share Posted March 1, 2001 * Exported from MasterCook * Coconutty Cookies Recipe By : 1,000 Vegetarian Recipes by Carol Gelles, page 538 Serving Size : 48 Preparation Time :0:00 Categories : Cookies And Bars Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups all-purpose flour 1 cup oat flour or whole wheat flour 1 teaspoon baking powder 1/4 teaspoon salt 1 cup softened butter or margarine -- (2 sticks) 3/4 cup sugar 1 egg 7 ounces packaged sweetened shredded coconut 1 teaspoon vanilla extract Ovo Makes: 4 dozen; serves: 12 to 15 You can dress up these cookies by rolling them in additional coconut before baking. Oat flour is available in health food stores. 1. Preheat the oven to 325F. 2. In a medium bowl or on a piece of waxed paper, stir together both flours, the baking powder, and salt. 3. In a large bowl, cream the butter or margarine with the sugar until light and fluffy. Beat in the egg; then the flour mixture. Beat in the coconut and vanilla. 4. Roll into balls about 1 1/2 inches in diameter. Place on ungreased baking sheets. 5. Bake 20 to 25 minutes or until slightly browned. Cool on rack.
