Cilantro-Two Onion Relish

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1/2 cup finely chopped onions

1/4 cup chopped fresh parsley

1/4 cup chopped fresh cilantro

1/4 cup chopped scallions

(white and green parts)

 

Vegan. Low fat

 

Makes: 1 1/4 cups.

 

I love to sprinkle this on top of most bean dishes, stir it into yogurt,

add it to soups, or toss it on anything that needs a bit of zip.

 

1. In a small bowl, stir together all the ingredients.

 

Variation: omit the cilantro and increase the amount of parsley.
