Chili Millet With Peppers

2 tablespoons vegetable oil

1/2 cup millet -- rinsed

3/4 cup chopped onions

1/2 cup chopped red bell peppers

1/2 cup chopped green bell peppers

1/2 tablespoon minced seeded jalapeño pepper -- up to 1

1 clove garlic -- minced

2 teaspoons chili powder

1 cup boiling water

1/2 teaspoon salt -- or to taste

 

Vegan.

 

Makes: 3 cups; serves: 4 to 6

 

For a main course, stir in 1 1/2 cups cooked kidney beans during the last

five minutes of cooking (especially good with the cheese variation). Serve

topped with sliced scallions.

 

1. In a 2-quart saucepan, heat the oil over medium-high heat. Add the

millet; cook, stirring, until the millet crackles, about 2 minutes.

 

2. Add the onions, all the peppers, and garlic. Cook, stirring, until

vegetables are softened, about 3 minutes. Stir in the chili powder until

absorbed.

 

3. Add the boiling water. Reduce heat and simmer, covered, 30

minutes. Remove from heat, stir in the salt, and fluff with a fork. Let

stand 5 minutes.

 

Variation: Chili Millet with Cheese: Stir in 1 cup shredded Cheddar when

you add the salt.
