Sweet Potato Chips (Gelles)

2 cups peeled sweet potato -- sliced paper-thin*

oil for deep frying

salt

 

Pour the oil 2 inches deep into a 2-quart saucepan. Heat the oil until it

bubbles when a small piece of sweet potato is dropped in. Place a small handful

of potato slices into the oil. Cook until slices lose their dark orange color

and have brown blisters on both sides, about 3 minutes. Drain on paper towels.

 

Repeat with remaining potatoe. Salt chips if desired.

 

VARIATION: Potato Chips: Substitute plain white potatoes for the sweet

potatoes. Cook until very lightly browned.
