Guest guest Posted March 1, 2001 Report Share Posted March 1, 2001 * Exported from MasterCook * Tofu in Brown Sauce Recipe By :1,000 Vegetarian Recipes - Carol Gelles Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup vegetable broth 2 tablespoons hoisin sauce 2 tablespoons mirin or dry sherry 1 tablespoon black beans in garlic sauce (available in Asian markets) 1 tablespoon cornstarch 1 1/2 teaspoons sugar 2 teaspoons vegetable oil 1/2 cup sliced scallions -- 1-inch pieces; white and green parts 1 tablespoon minced fresh ginger 3 cloves garlic -- minced 1/4 teaspoon red pepper flakes, or to taste 6 cups cubed tofu 1 cup cooked peas, fresh or frozen Serves 4 to 6. In a small bowl, stir together the broth, hoisin sauce, mirin, black beans, cornstarch, and sugar. In a wok or large skillet, heat the oil over high heat. Add the scallions, ginger, garlic, and red pepper flakes. Cook, stirring, until softened, about 30 seconds. Add the tofu, peas, and brown sauce. Cook, stirring, until sauce is thickened and tofu is heated through, about 2 minutes longer. Description: " This has to be served as soon as it's cooked because the sauce gets thinner as it cools, rather than thicker. Serve this with brown rice.
