Guest guest Posted February 28, 2001 Report Share Posted February 28, 2001 * Exported from MasterCook * Tamale Pie Recipe By : 1,000 Vegetarian Recipes by Carol Gelles, page 223 Serving Size : 4 Preparation Time :0:00 Categories : Beans And Legumes Grains And Cereals Main Dishes, Vegetarian Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- ***STEW*** 1 tablespoon vegetable oil 3/4 cup chopped onions 3/4 cup chopped green bell peppers 3 cloves garlic -- minced 2 tablespoons chili powder 1/2 teaspoon ground cumin 28 ounces canned crushed tomatoes 1 1/2 cups diced firm tofu -- (1/4-inch pieces) 1 1/2 cups cooked kidney beans (cooked from dry; or canned drained) 1 cup corn kernels (fresh cooked or canned drained or frozen) ***TOPPING*** 1/2 cup cornmeal 1/2 cup all-purpose flour 2 teaspoons baking powder 2 teaspoons sugar 1/2 teaspoon salt 1 egg 1 egg white 2/3 cup milk 3 tablespoons melted butter or margarine Lacto/Ovo Makes: one 9-inch-square pie; serves: 4 to 6 This is not really a pie, since the filling is on the bottom and the crust is on the top. 1. For the stew, in a 2-quart saucepan, heat the oil over medium-high heat. Add the onions, bell peppers, and garlic; cook, stirring, until softened, about 2 minutes. Stir in the chili powder and cumin until absorbed. 2. Add the tomatoes and bring to a boil. Stir in the tofu, kidney beans, and corn. Spoon into a greased 9 x 9-inch-square baking pan. 3. Preheat the oven to 400F. 4. For the topping, in a large bowl, stir together the cornmeal, flour, baking powder, sugar, and 1/2 teaspoon salt. 5. In a medium bowl, beat the egg and egg white. Add the milk and melted butter or margarine; beat until completely combined. 6. Stir the liquid ingredients into the dry until the dry ingredients are moistened. Spread over the stew. 7. Bake 30 to 35 minutes or until top is browned and a wooden pick inserted in center comes out clean. Variations: Add one 4-ounce can chopped chilies, drained, when you add the beans.
