Cilantro Rice And Black Beans

2 cups cooked white or brown rice -- (I use white)

2 cups cooked black beans -- drained

(cooked from dry or canned)

6 tablespoons Cilantro Pesto -- (1/2 recipe)

(see separate recipe)

1/4 teaspoon salt -- or to taste

 

Vegan.

 

Makes. 4 cups; serves: 4

 

This recipe was tested using leftover rice (from a Chinese take-out dinner)

and canned beans; if you are using freshly cooked, still-warm rice and

beans, just stir the ingredients together and serve. If either is not hot,

it's easiest to use a microwave, as called for below. If you don't own a

microwave, reheat on the stove top, adding a tablespoon or two of water to

prevent the rice from sticking to the pot.

 

1. In a 1 1/2-quart microwave-safe bowl, stir together the rice, beans,

pesto, and salt. Cover the bowl loosely and microwave on high power (100%)

2 minutes. Stir; microwave on high power 1 minute longer or until heated

through.

 

Variation: Parsley Rice and Black Beans: Substitute Parsley Pesto (see

separate recipe) for the Cilantro Pesto.
