Very Quick Barbecue Tofu and Rice with Black Beans

1 1/2 cups cooked rice

1 10 1/2 oz can black beans -- drained and rinsed

1/3 cup barbecue sauce

1/4 cup water

4 cakes tofu -- diced into 1/2-inch pieces (4 cups)

 

In a 2-quart saucepan, stir together the rice and beans. Add the barbecue sauce

and water; stir until combined. Cook over medium heat, stirring occasionally,

10 minutes or until heated through.

 

Stir in the tofu and cook until heated through, about 2 minutes longer.

 

Variation: Use kidney or any other bean.

 

Description:

" This is one of my leftover-rice-from-the-Chinese-restaurant recipes.

Canned beans, barbecue sauce, and tofu combine for a very quick, very

nutritious entree. "
