Guest guest Posted February 28, 2001 Report Share Posted February 28, 2001 * Exported from MasterCook * Very Quick Barbecue Tofu and Rice with Black Beans Recipe By :1,000 Vegetarian Recipes - Carol Gelles Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups cooked rice 1 10 1/2 oz can black beans -- drained and rinsed 1/3 cup barbecue sauce 1/4 cup water 4 cakes tofu -- diced into 1/2-inch pieces (4 cups) In a 2-quart saucepan, stir together the rice and beans. Add the barbecue sauce and water; stir until combined. Cook over medium heat, stirring occasionally, 10 minutes or until heated through. Stir in the tofu and cook until heated through, about 2 minutes longer. Variation: Use kidney or any other bean. Description: " This is one of my leftover-rice-from-the-Chinese-restaurant recipes. Canned beans, barbecue sauce, and tofu combine for a very quick, very nutritious entree.
