Guest guest Posted February 28, 2001 Report Share Posted February 28, 2001 From The Vegetarian Sandwich Cookbook by Paulette Mitchell Sun Dried Tomato Pesto Use as a sandwich spread Makes 1/2 cup 1/4 c oil-packed minced sun-dried tomatoes; drain and reserve oil 1 T reserved oil from sun-dried tomatoes 1 T concentrated tomato paste 1 T lemon juice 2 cl garlic, minced 1/4 t pepper 1/4 t red pepper flakes (or to taste) salt to taste 1 T minced fresh flat-leaf parsley Process all ingred except parsley, in food processor until smooth.
