Guest guest Posted February 27, 2001 Report Share Posted February 27, 2001 * Exported from MasterCook * New Orleans Black Muffins Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup hot water 1/2 cup molasses 1/4 cup milk 2 cups whole wheat flour 1 cup flour 3/4 cup C & H Pure Cane Granulated Sugar 3 tablespoons baking powder 1 teaspoon baking soda 1 teaspoon salt 1 1/2 cups pecans -- chopped In a medium bowl, combine hot water and molasses; stirring until well blended. Stir in milk. In a large bowl, sift together whole wheat flour, flour, sugar, baking powder, baking soda, and salt. Fold the liquid mixture and the chopped pecans into the dry ingredients just until moistened. Spoon into a greased muffin tin. Bake at 300 degrees for 45 minutes to 1 hour, or until the center is set. Remove from the muffin tin immediately.
