Southwest Salsa Soup

1 recipe Fresh Tomato Soup

(see separate recipe)

1/4 cup chopped fresh cilantro

1 tablespoon chili powder

1/2 teaspoon ground cumin

8 ounces canned corn kernels -- undrained

4 ounces canned chopped chilies -- drained

 

Vegan. Low fat

 

Makes: 1 1/2 cups; serves: 10 to 12

 

This recipe takes off where the Fresh Tomato Soup finishes.

 

1. Prepare Fresh Tomato Soup according to recipe, but add cilantro, chili

powder, and cumin to the soup before puréeing.

 

2. After puréeing, stir in corn and chilies; reheat if necessary.

 

Variation: Omit the chilies for a milder soup.
