Guest guest Posted February 27, 2001 Report Share Posted February 27, 2001 * Exported from MasterCook * Barley with Vegetables Recipe By :1,000 Vegetarian Recipes - Carol Gelles Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon vegetable oil 1 cup chopped onions 1 cup chopped celery 2 1/2 cups vegetable broth 1 cup barley -- rinsed 1 cup chopped carrots 4 cups spinach -- in bite-size pieces 1/3 cup Parmesan cheese (optional) 1/4 teaspoon pepper Serves 4 to 6. In a 2-quart saucepan, heat the oil over medium-high heat. Add the onions and celery; cook, stirring, until softened, about 3 minutes. Add the broth and bring to a boil. Add the barley; retuurn to a boil. Reduce heat and simmer, covered, 30 minutes. Add the carrots and spinach; simmer, covered, 15 minutes longer. Stir in cheese, if desired, and pepper. Variation: Stir in one cup fresh or frozen peas when you add the spinach. Description: " You can use a 10-ounce package of frozen chopped spinach instead of the fresh.
