Guest guest Posted February 27, 2001 Report Share Posted February 27, 2001 * Exported from MasterCook * Rosemary-Mushroom Risotto Recipe By :1,000 Vegetarian Recipes - Carol Gelles Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup mushroom broth 1 cup vegetable broth 1 3/4 cups water 1/2 teaspoon dried rosemary -- crumbled 1/4 teaspoon dried thyme 2 tablespoons olive oil 1 1/2 cups chopped white mushrooms 2 tablespoons minced shallots 1 cup Arborio rice 1/4 cup chopped fresh parsley 1/2 teaspoon salt, or to taste 1/8 teaspoon pepper Serves 4 to 6 Although I use white mushrooms in this recipe, shiitakes would be wonderful. If you don't want to go through the bother of making mushroom broth, you can just use additional vegetable broth instead, but, of course, the mushroom flavor will not be nearly as intense. In a 2-quart saucepan, heat both of the broths, the water, rosemary, and thyme until simmering. Keep on low heat so that the liquids stay warm throughout the cooking time. While broth is heating, heat the oil in a 3-quart saucepan over medium heat. Add the mushrooms and shallots; cook, stirring, until the mushrooms are softened. Add the rice; cook, stirring, until rice is coated with oil. Add the broth to the rice mixture, 1/4 cup at a time, stirring constantly, until the rice has absorbed the liiquid. (You should make the next addition of liquid when you can draw a clear path on the bottom of the pot as you scrape through the rice with a wooden spoon. This will happen rather quickly at first and will take longer as you near the end of the cooking time.) Add the parsley, salt, and pepper when you add the last pportion of broth. Variation: Stir in 1/3 cup grated Parmesan cheese when the parsley is stirred in.
