Small White Beans with Wheat Berries

1 tablespoon olive oil

1/2 cup chopped onions

1/2 cup chopped zucchini

1/2 cup chopped yellow squash

1 cup lightly packed escarole

1 1/2 cups cooked small white beans

1 cup cooked wheat berries (whole graiin wheat)

1/4 teaspoon salt, or to taste

1/8 teaspoon pepper

 

In a large skillet, heat the oil over medium-high heat. Add the onions,

zucchini, and yellow squash; cook, stirring, until vegetables are softened,

about 4 minutes. Add the escarole; cook, stirring, until wilted, about 3

minutes longer.

 

Add the beans, wheat berries, salt, and pepper; cook, stirring until heated

through, about 2 minutes.

 

Variation: Stir in 1/2 cup grated Parmesan cheese just before serving.

 

Yield:
