Broccoli with Black Beans and Garlic

1 1/2 tablespoons olive oil

4 cloves garlic -- minced

6 cups broccoli florets

1 cup vegetable broth

1 1/2 cups cooked black beans

 

Serves 3 to 4. In a large skillet, heat the oil over high heat. Add the

garlic; cook, stirring, 10 seconds. Add the broccoli; cook, stirring, until

tender crisp, about 4 minutes.

 

Add the broth and bring to a boil. Add the beans. Return to a boil and cook,

stirring, until heated through, about 3 minutes.

 

Variation: Add 1 cup sliced red bell peppers when you add the broccoli.

 

Description:

" Served over polenta or brown rice, this dish makes a very satisfying

meal. "
