Salsa Verde

Recipe By : 1,000 Vegetarian Recipes by Carol Gelles, page 480

Serving Size : 8 Preparation Time :0:00

Categories : Sauces And Marinades Vegetables

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

10 medium tomatillos -- (1 pound), up to 12

1/3 cup chopped onions

1/4 cup lightly pocked fresh cilantro leaves

1 jalapeño pepper -- seeded and chopped

(or more or less to taste)

2 cloves garlic -- minced

1/2 teaspoon sugar

1/4 teaspoon salt -- or to taste

Makes: 1 1/2 cups; serves: 8 to 12

For a truly wonderful flavor I make this with fresh tomatillos (also known

as Mexican green tomatoes), but you can use canned ones if that's all

that's available in your area.

1. Place the tomatillos in a 2-quart saucepan, covered with water. Bring

to a boil. Reduce heat and simmer 10 minutes or until tender when pierced

with a fork; drain,

2. Place the cooked tomatillos in a food processor container fitted with a

steel blade. Cover and process until not quite smooth. Add the remaining

ingredients and pulse on and off, often enough to combine the ingredients

but to leave the texture coarse.
