Creamy Salsa

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1/2 cup unflavored yogurt

1/4 cup sour cream

1/4 cup chopped scallions

(white and green parts)

3 tablespoons salsa -- (red or green)

2 tablespoons mayonnaise

1/4 teaspoon ground cumin

 

Lacto-Ovo.

 

Makes: 1 cup.

 

This creamy sauce is tangy from the salsa. Use it instead of yogurt or

sour cream on top of chili or as a dip for vegetables (I especially like

Belgian endive or celery with this).

 

1. In a medium bowl, stir together all the ingredients.

 

Variation: Add chopped chilies to taste. This cooked salsa is milder than

most and is excellent to serve as a sauce over such dishes as omelets,

patties, and loaves.
