Warm Salsa Sauce

1 tablespoon olive oil

1/2 cup sofrito

(homemade or store-bought)

1 cup stewed tomatoes

(homemade or one 8-ounce can)

1/8 teaspoon salt -- or to taste

 

Vegan. Low fat

 

Makes: 1 1/2 cups; serves: 6 to 10

 

1. In a 1 1/2-quart saucepan, heat the oil over medium-high heat. Add the

sofrito; cook, stirring, until just barely softened, about 30 seconds.

 

2. Add the tomatoes and salt; bring to a boil. Serve warm or cool.

 

Variation: For a spicier version, add 1/8 to 1/4 teaspoon ground red pepper.
