Low fat Makes: 1 1/2 cups; serves: 6 to 10 1. In a 1 1/2-quart saucepan, heat the oil over medium-high heat. Add the sofrito; cook, stirring, until just barely softened, about 30 seconds. 2. Add the tomatoes and salt; bring to a boil. Serve warm or cool.
